I cannot even tell you what the scale said this morning. I have a very special talent: I can gain five pounds in five days. Or less. A-hem.
Okay.
Today, I ate, in this order:
Oatmeal with sprinkling of craisins, chopped pecans, cinnamon, Splenda.
Low-carb (50 calories!) tortilla with Laughing Cow cheese spread and lettuce.
Granny Smith apple with all-natural peanut butter.
Fiber-One yogurt with All-Bran sprinkled in.
I supplemented this with my beloved Diet Coke with Lime.
I made bean soup for dinner (to use up leftover ham). I'll probably have just a little and have a bunch of steamed vegetables. Too much ham = too much salt = bloating!
Tomorrow, we'll weigh in and find out exactly how much work we have ahead of us. Don't worry--it won't hurt a bit!

Dinner: Bean and ham soup with added chopped broccoli.
Snack: Half-bag fat-free popcorn, followed by sliced strawberries topped with a sugar-free ("South Beach") pudding.

Today I had the stents removed from my kidneys (yea!!) and picked up my oldest son from the airport (he's visiting this week). I ate odd all day, mostly because it's the first time in a month that I've felt near normal. I've maintained my weight for the last month of sickness and am glad that now I can get back on track and losing weight again.
Today I didn't write down what I ate, but for I had a bowl of cereal with 1/2 cup almond milk, a bunch of strawberries, more strawberries, a few pieces of easter candy (even tho I said I wasn't going to eat any), 1/2 of a bagel, and a small home made burrito. Far far too many carbs....(did I mention I'm feeling much much better?)

I guess having gallstones is working for me as a diet plan. Eat anything fatty, greasy or spicy and spend hours rolling on the floor in agony. I had oatmeal, bananas, squash, more bananas, more squash, well you get the idea...

Just want to say that I am in love with the Progresso Light Southwest Vegetable soup. No pasta in it, full of good veggies (tomatoes, black beans, carrots, celery, some corn). I try and counteract the sodium (found in anything canned) with lots of extra water (which is never a bad thing, right?).
As a working single mom, getting out the door in the morning it tough. But I know if I don't bring my lunch with me I'll end up in the cafe in our building and get something I'll regret eating later. So a can of soup it is!
Very tasty, low in calories and full of veggie goodness! Add to that some crudites (red & yellow peppers and celery usually) with Laughing Cow and I've got one healthy, filling and guilt-free lunch!
(I have been known on occasion to crumble up a couple whole grain tortilla chips into the soup for some texture...)
Here's to the rest of our low-GI lives!!

Hi Mel ~ Looks like a great first day. I'm sure you already know this, but don't worry so much about the 5 pounds ~ it could be a variety of anything. And I'm sure most of it is due to the ham, like you said :-)

Sounds like you picked really healthy choices! I know what you mean about bloating, I hate that!!!! (I am avoiding the scale until Friday)
